First step is to make up/down or scrolling the knob on a Now Playing screen with only one item in it should adjust volume.     See also bug 8292.

Second step is to make it more like the controller, where in a multi-item playlist, you'll need to go right or push the knob to enter the list then scroll through it.  This should be settable via preference for those who prefer the old behavior.
