Slim product broadcasts to 255.255.255.255

But I do not want to broadcast the entire internet... So what is doing this and how can I create a rule to stop it going out, since I probably need the port open on the firewall...
Those are broadcast packets used to discover SqueezeCenter servers on your LAN. They only affect your local subnet.
That may very well be, but I run squeezecenter from a multi-homed server, since it also my firewall/router and general purpose server. So either there has to be a setting to allow it only to bind to the internal IP, or people like me should be advised to block broadcasts on their outside interface (which is probably in general a good idea ;-) I might write up a wiki page on firewalling, since most content is on windows application firewalling and not on IPtables and stuff (it took me a long time to find what ports the squeezecenter and -box use, and even now I am not entirely sure I have everything setup correctly. So perhaps this should be marked as a bug/omission for documentation...
