During the registration process, if I select a (supported) language from the drop down box, the email that is generated is not for that language.

I.E. Germany does not generate German language email

Works for me.  Country selection does not influence language, that uses either your browser's Accept-Language header or the language drop-down at the top of the page.

This bug has recently been fixed in the latest release of SqueezeCenter 7.0.1

Please try that version, if you still see the error, then reopen this bug.
