I'm using Slimserver with a VIA M10000 Mobo.
The graphic output is set at 720 X 486.
The Slimserver interface is little bit squeezed when viewed at this resolution.

Are you using the Default skin?  720x486 is a pretty small display - most older video cards will do at least 800x600, which is workable if you run the browser full screen.  It's usually devices like PDAs, tablet PCs, and small notebooks that are contrstrained to low resolutions.  In those cases you may want to try the Touch skin, which was designed for smaller displays.  The Nokia 770 skin, for SlimServer 6.5 may also work well for you, but you'll want to try it with Firefox or Opera.

I'm using a VIA M10000 as a music server and a PVR.
Right now I'm using the S-Video output of the VIA to my Sony GWIII.
Here's why the 720 X 480 resolution...
The Slimserver interface is not lacking that much, about 80 pixels.
The Slimserver handheld interface works but the typo is little to small.
