iTunes has two music directories, L: & M:.  M: is the current directory iTunes manages music to, L: is the older volume that filled up.

On upgrading to 7.6, the iTunes scanner will only scan the music in the M: directory.
The scanner log shows no errors, there is no mention of the L: volume.

Reverted back to 7.5.5 and everything scans correctly.

are you using iTunes integration or file paths only? The former doesn't use the folders directly, but is reading iTunes' data file. If you entered a file path, then you'd need to put hyperlinks from one folder to the other to get them all scanned.

Odd that 7.5.5 would work. Could you please enable debugging for scan.* and plugin.itunes, run a full wipe & rescan again and upload the scanner.log and server.log files?

My iTunes 10.4 only allows me to define one single media folder. What directories are you referring to?

I should have said "iTunes is using two music directories.  L: was used until it filled, then the setting was changed to M:.  The older music remains in L:, newer CDs are ripped to M:.

After downgrading to 7.5.5, I tested re-upgrading to 7.6.  This time the original scan during the upgrade failed, but subsequent 'Clear Library and Rescan Everything' works.
The only difference I noticed on the second upgrade was that the scan during the upgrade didn't hang as it did the first time.   Looking at the logs, it appears the mysql communications were having problems on the first upgrade.
Not understanding how the back end of this software works, I won't speculate what happened.  I will upload the server.log entries from the original install, hopefully they will help.  Unfortunately, there are no scanner.log entries for that time.

Sorry, but one more entry:
I just want to clarify my setup.
   iTunes:  library is in L: & M: volumes, currently set to M:
   Squeezebox:
      'Use iTunes' is checked
      'iTunes Music Library .xml Location' is set
      'Music folder' is set to a non-itunes folder where I keep hires flac files iTunes won't play (also on M:)

Could you please provide a _full_ scanner.log file after enabling debugging for plugin.itunes in Settings/Advanced/Logging?

This might be related to bug 17457
