I found that the clock in "now playing information" is selectable only by http://www.mysqueezebox.com and not ciclying with the remote on the sb3.

did some tests: the option is available in SB3 menu, but not available using the "now playing" button of its remote.

Using Squeezebox Server:
The options for the "now playing" button are set from the web interface.  Each pulldown menu gives you the option of which now playing screen you want to have available and in what order.  The radio buttion then selects the current one to use.  Pressing the now playing button on the remote will step through each of the selections in the list.  If you stop at a different style, you'll see the radio button now points to that one when you go into the settings page again.

Using MySB: 
settings UI is simplified, so that the toggle options are simply not available. I believe in this case that the avilable toggle options are not intended to be something you can customise while using MySB. In many ways, it isn't as flexible as having your own server.

My guess would be that MySB.com users prefer simplicity and this won't ever receive broad support, but We do review Future targeted bugs on a monthly basis to see new votes and comments.
