When I turn on some logging to check something, there is no easy way to return to the default settings.

Sometimes, a reboot is sufficient - which is way overkill.

But if I need to have the setting made "permanent" there is no way, short of writing them down, to get back to the defaults.

Oh, there is: "Select Log set..." -> "Reset logging preferences"
