Have SqueezeTray launch the installer with /log=filename and save the file in Squeezebox Server's logdir.  Call it 'installer.log'(?)  Optionally, rotate the log and keep a couple older versions so that they can be compared - installer.log.1, installer.log.2, etc.

This bug has been marked as fixed in the 7.4.0 release version of SqueezeBox Server!
